  • Woohoo, I rearranged my schedule a little so I could do this WOD :)

I also tried some no-honey baking last night in order to keep the carbs down as per coach’s instructions…

I made Son of Groks carrot caveman cookies (apparently a batch of 10 has 1 g of carbs each from the carrot). I followed the recipe on the website except I used pumpkin spice bc I didn’t have nutmeg. And I might have slightly overcooked them, but at best I could say they “taste” really good but they’re the driest cookies I’ve ever had. But since we’re trying to increase the fat intake I think I might melt some butter on them and eat them as breakfast biscuits, mmmmm…butter! Or perhaps, add an extra egg or more oil to the batter next time? They are good enough for a next time.

I also made a batch of Suzanne’s sesame crackers and had to wonder why I don’t make more of these! They are the best crackers I’ve ever had, ever, even better than triscuits and I looooved triscuits.

    Recipe is…

3 Cups almond flour (my coarse grind homemade stuff worked fine)
    1 cup sesame seeds
2 Tbs oil (I used grapeseed, but I guess you could use EVOO)
2 eggs (whipped till frothy, then add everything else)
1 Tbs sea salt (they are pretty salty, but that’s part of what makes them delicious)

Roll a portion of the dough between two sheets of parchment paper and make sure it’s really thin…almost too thin to lift it off the parchment without the cracker breaking…then I cut out cracker squares and lay them separately on more parchment on another sheet and pop them in the over for 8-10 min at 350F. Don’t let them burn, but I love toasted sesame seeds so I like them barely golden brown. While you’re waiting for them to cook, roll out another batch. I have no clue how many I made but it’s well worth the effort and you can eat them with whatever you would normally eat on a cracker, mmmm.

I also made more paleo sushi, just nori, whatever fillings you like (cucumber, avocado, arugula, sesame seeds, smoked salmon, shrimp, and of course avocado etc.), and I use some mayo or taziki (sp?) as “glue” on half the nori and it has the same sticking, moistening effect as rice. I eat them like rolled burritos though since I don’t think they would hold together if I cut them. I also use tamari instead of soy sauce with a ton of wasabi :) The best part is bc there’s no rice to fill you up… you can eat more!

Ok, now it’s time to head to the gym :)

  • …not sure what i did yesterday, but i tweaked my neck pretty bad, so i think i’ll sit today out of lifting, and do a CFE running workout on my lunch today…

  • Love that quote, the grammar is a little messed. Should read,

“The doctor of the future will give no medicine, but will interest his patients in the care of the human frame, in diet, and in the cause and prevention of disease.”

I wasn’t too thrilled w the thought of a ‘light’ week, but after the pull up wod and this, I am sore all over. I guess I need to eat my words now.

  • @mlc
I think “light” week is a little misleading!! I agree my arms were (are?) so sore after that pullup wod and now my glutes are hurting!
