This week the focus is on lunch.  Traditionally, sandwiches and soup rules this meal, so I’ll start you off with a couple of recipes.

Pesto Spinach Bread from Mark’s Daily Apple – you can replace the butter with coconut oil or olive oil.

Elana’s Pantry Radicchio Salad – you could easily spend a couple of hours browsing this site for recipes…

A quick meal from My Paleo Kitchen – I haven’t tried this particular recipe, but the bok choy peach stew is awesome.

Simple Salad Dressing from Son of Grok - This recipe is almost the same as my husband’s grandfather’s recipe, but he swore that the key to good homemade salad dressing was never washing the bottle!

  • Lunch for today – left over rost beef and broccoli. The beef has gravy which my wife assures me came from the beef and only includes spices. What will likely turn out to be the case is that my lunch will look a lot like my supper from the night before. I am a big fan of leftovers, so that is what makes its way to my lunch 90% of the time. On a side note, I am feeling very good with lots of energy. Did the row/thruster WOD from mainpage yesterday (using 135lb thrusters which are heavy for me) and did pretty well. I have been upscaling all of my WODs from the mainpage lately and I am pleased with the result. I would love to be Rx’d on all by the end of the year, we shall see.

  • Lunch is always a sticky one for me Monday-Thursday as I am at school. But today I packed some left over pork and broccoli as well as 1/4 cup of almonds. Lunch 2 is more of a snack and is a protein shake with my greens supplement in it.

  • Lunch for me today… and almost every day… is a ground turkey, broccoli slaw concoction. Delish!

  • Leftover 40 garlic chicken from last night yu-freakin-um. Brocoli. Almonds. banana, strawberries, and an apple.

  • Lunch: Mixed greens salad with chicken

  • Lunch….8oz beef…..4 cups spinach…. 10 almonds…

  • I think we need some Super Bowl recipes for this weekend???

  • lunch. salad made with romaine lettuce, can of salmon, tomatoe and grapes; lemon juice pepper and dill weed added to the salmon.

  • lunch: casserole made with ground beef, onions, mushrooms, green pepper, cauliflower and asparagus.

    I bought a crock pot over the weekend and made the garlic chicken. I think i put too much broth as the chicken was a bit soggy and the gravy wasn’t as thick as yours

  • lunch – stir fried leftover pork with celery, spaghetti squash, and whatever other veggies I find in my fridge plus salsa.

  • Lunch is my best meal – Salad, Beans with butter, and lots of fish.

  • lunch: grass-fed grd beef “shepherd’s pie”, c/o Mandy’s recipe (mmm, yum!) minus the tomatoes, didn’t have any on hand. ate a couple extra cauliflowers to get full.

  • Lunch:
    1 Can Tuna mixed with 1 avocado. 1 Banana.

  • Lunch: Jodi had a ground beef/pork mix with some fruit, celery and almond butter. I had beef/pork with a pear.

    I made it again this weekend. Just barely cover the tips of the garlic. I cook it on a 6 hour setting for about 4.5 hours. I think that dish is really hard to over cook. As for the gravy – to be totally honest…i threw in about a a tblspoon of corn startch – i feel dirty now.

  • Lunch: Pork stirfry!!

  • Grilled chicken breast with bacon (I ended up pulling off the bacon, I had waaaayyyy too much salty meat this weekend) and salad with cuke, tomato, peppers, radichio etc. yum!

  • Lunch…baked salmon (yummm)with broccoli slaw with seads/nuts & apple.
    As for this past weekend … I survived dinner at friends & a bithday party Saturday night. Friday supper had spaghetti & garlic bread on the menu (supper invite) I enjoyed a plate of salad with sauce. For desert they had banana splits…I had some banana, few nuts (it was tough to walk past the frozen yogurt! but i did!! Saturday night, I ate before I went to the party and then creatively visited around..avoiding the food table which had nothing “real” on it!! I found it quite easy to visit in small group and when they went to fill their plates…I went & grabbed a cup of coffee and joined the small group that had already emptied their plates…no one was the wiser :o )

  • Lunch: Large salad with organic leafy greens, kale, spinach, 1 can of salmon, sprouts, 3 strawberries, 2 oz of beef and balsamic vinegar for dressing.

  • lunch…what can I say..this is often a real challenge for me as my work takes me from place to place, things pop up yadayada…today emergency meeting called at 11AM lasted until 2:30 with no breaks. I had some chicken and veggies in my lunchbox but as I’m driving my new truck (after the meeting off to the next fire)and I didn’t remember to pack any tools to eat with lunch today was a protein bar and some jerky that was supposed to be my pm snack along with a pear. Try again tomorrow :)
