Food should make you healthy?!! Now there’s a radical thought!
Tried making the butternut squash latkes that someone posted on here – couldn’t get them to actually hold together so ended up just stir frying the whole batch. Very tasty! I think bns may be my new favorite food. Had the leftovers for breakfast this morning – awesome!

@ Erika. I posted the latkes recipe. I agree… they didn’t stay together in ‘patty’ form… so I just throw a mound in to the pan… squish them down with the spatula, and go from there. Glad you liked them… I just bought another BNS to make some more! I made an omelet with them the next day… also yummy!!
Dinner will be BNS fries and bison meatballs.

Welp, I will start this thing along then….:)
dinner tonight will be my very favourite chicken wings and some butternut squash for the hubby so he doesn’t leave me for Mandy.
I make my menus on Sundays and then grocery shop accordingly. when I get home I marinade anything I can that will be safe to last in th fridge for a few days, make as many meals as I can and chop up my veggies and snacks. That way gym nights we are just heating things up and Wednesday nights I cook a little more again. I have learned this is the best way for us to stay on plan and eat balanced. Otherwise it’s a whole lotta eggs and bacon.

Mike and I had italian sausages with BNS. Delicious!! We have plans to try spagetti squash later this week.
Bit of a confession to follow from Jodi…

I admit I have been off track the last week. Unhealthy eating way more than is acceptable. This I’ve noticed has lead to difficulties with working out, digestion ect. Bit of a stressful time right now and I have resorted to old habits. Part of our previous success has come from proper planning and we haven’t been cooking meat or preparing veggies ahead of time like we were the first month. It is so much easier to have snacks and meals precooked in the fridge. So, tonight I went and bought a lot of meat and veggies with plans to cook and slice all morning tomorrow.
I honestly am not too upset with the set back as I know for me to fully change and commit to this new lifestyle is going to take longer than two months. I’m happy with the changes so far and know that things will get back on track and more changes will follow in the future.
So that is my confession and it will be easier staying on track time this because I certainly don’t want to feel like this all time

I had a eggy, almond flour soufle, smothered in blueberry sauce. With a bit of bacon.
