Real Food Challenge Day 55

The challenge officially ends Sunday, but it’s been a huge success and I’d like to keep posting nutrition related information on a regular basis. We’re also looking at setting up a forum or separate blog just for this. So, tomorrow will be our last post and you have until Friday to send in your AFTER pics and a few words about what this challenge has done for you. I’m looking forward to hearing about lifestyle, aesthetic and performance accomplishments.

Mmmmm… chocolate covered fried bananas. There is a god.
Snacks will probably be a couple clementines and some nuts.
This is a go to dessert if we are going to someone’s house, or bday party… where we know we won’t be suffering after:
Cake Brownies
Ingredients:
6 TBS oil (I’ve only ever used olive oil, but coconut oil would be tasty)
1/2 C raw honey
2 eggs
1/2 C carob powder (or raw cocoa)
1/2 C pecan or almond nut meal
1/4 C arrowroot flour
Optional: coconut and walnuts
Mix all and poor into a greased 8x8x2 inch pan (or mini muffin tin). Bake at 350 for about 20 minutes or until a toothpick comes out clean. Delish!
Mmmmm – Mandy that sounds yummy. I will have to try that for those days when you just want something sweet.
Snacks today will be fruit/almonds/some sort of protein – whatever happens to be on-hand.

Very snacky today….lots of frozen berries, apples, raisons etc etc……
My Snack today….I treated myself to a fruit salad…probably sent my insulin soaring but it was yummy…
